You are arriving just in time for the fall foliage. I have friends who just rented a home there, and I don't think they have as restrictive lease agreements. Some of that area like Montford is also somewhat walkable to downtown — but still a tad father out. The Residence Inn Marriott at Biltmore offers extended stay rooms and receives good reviews; we've been around there but have never stayed there. Tunnel Road has extended stay hotels, but that area is kind of wild and strip mall-ish.
I'd check Airbnb, too. The city is restrictive on Airbnbs — so they are usually on the outskirts of town — but they do exist. So, where should you stay in Asheville?
